Delicious Malabari Chicken Stew Recipe for a Perfect Meal

Ingredients:

  • 1 pound boneless chicken breasts, cut into bite-sized pieces
  • 2 tbsp coconut oil
  • 1 onion, chopped
  • 1 tsp ginger, minced
  • 1 tsp garlic, minced
  • 1 green chili, slit lengthwise
  • 2 cups thin coconut milk
  • 1 cup thick coconut milk
  • 1 large potato, cubed
  • 1 large carrot, cubed
  • 1 red bell pepper, cubed
  • 1 tbsp coriander powder
  • 1 tsp turmeric powder
  • Salt to taste
  • Curry leaves for garnish

Instructions:

  1. Heat coconut oil in a pan and add chopped onions. Fry until the onions turn golden brown.
  2. Add minced ginger, minced garlic, and slit green chili to the pan. Fry for a few minutes until fragrant.
  3. Add the chicken pieces to the pan and fry until they are cooked through and lightly browned.
  4. Add coriander powder, turmeric powder, and salt to the pan. Fry for a few minutes until the spices are fragrant.
  5. Add thin coconut milk, cubed potatoes, cubed carrots, and cubed red bell pepper to the pan. Bring it to a boil and then let it simmer until the vegetables are cooked and the chicken is tender.
  6. Add thick coconut milk to the pan and mix well. Cook for a few more minutes until the stew thickens.
  7. Garnish with curry leaves and serve hot with rice or bread.
